Banana Bread...

I always seem to find myself with some very ripe bananas...one day they are green, the next speckled and almost too ripe. I had four little very ripe bananas the other day and while the kids were home decided I just had to make them their favorite banana bread...the recipe calls for about two bananas...but I used all four that I had in the fruit bowl. It was inhaled...I used some little Panibois baking pans I had leftover from the holidays...One son is already back at school and the other is leaving on Sunday...the time flew by...In the blink of an eye it will be summer...and they will be back!
This is our favorite banana bread...I have made many and they are all good. But this one is the blue ribbon winner. It is always moist and just perfect, and even gets better with age ...This recipe made two Panibois pans for me...just perfect. They still took almost 50 minutes to bake.

Banana Bread
adapted from Martha Stewart

Makes 1 large loaf or 3 or 4 mini loaves 

1 stick butter, room temp
1 cup sugar
2 eggs, room temp
1 tsp. vanilla
1 1/2 cups flour
1 tsp. baking soda
1 tsp. salt
1 cup mashed very ripe bananas (about 2)
1/2 cup sour cream
1/2 cup chopped walnuts or pecans (optional)

Preheat oven to 350. Butter a 9X5X3-inch loaf pan or 4 mini loaf pans.

With electric mixer, cream butter and sugar until light and fluffy. Add the eggs and vanilla, beating well.

Sift dry ingredients and combine with butter mixture. Blend well. Add bananas and sour cream; mix well. Stir in nuts and pour into prepared pan.

Bake about 50-60 minutes, or until toothpick comes out clean (careful not to overbake; start checking early). Turn out onto a rack to cool.

    Now I see Martha was knocking at both our doors for today's posts:) Love those wood bakers..Very cute..can u bake more than once in them?

    Such keepers banana breads..Bet the boys loved every minute..the last one savoring his last days..x

    I think you can bake in them more than once if you have the parchment liners...but they are very fragile. So I tossed them after using...I just love them, they feel special...and when someone receives one it elevates a little banana bread to something special too!
    I will tell you secret...I think in reality I have even more pie plates than I thought I did! Lol!

  7. I also have trouble keeping up with ripe bananas. I've started to freezing them now I have an abundance of frozen bananas. this bread looks so good it's giving me inspiration to give it a try.

  9. I freeze them too....right in their skins...peel frozen before using...or you can peel them and put them in a plastic bag.
    Yeah...the pictures look really beautiful on the IPad....Santa
    Surprised me with it this year....I am lucky!

  11. Ask any mom and an i-don't-know-what-to-do-with-these-overripe-bunch-of-bananas problem arises every now and again. It does in our household. Thanks to your recipe, I'll have several options than just my old banana cake recipe. Will definitely try this! Thanks for sharing

  12. You are my hero Linda! I found 2 bananas in the fridge that had hidden under something... I can't bear to throw them out and would love to turn them into something nummy like banana bread... and you can't go wrong with a Martha recipe, bless her fat little head!

I love this one because it is made with butter...not oil....and the sour cream really makes it...I know it is only a lowly banana bread...but I think you will enjoy it with a cup of tea or coffee...and if you really want to gild the lily a schemer of cream cheese!

  18. I think it will be heavier...but why not try it. You might try half AP and half WW....or perhaps white WW flour...
    Let me know how that works out for you...I would love to try it myself...
