Pollo alla Calabrese... Chicken with Potatoes, Onions, and Tomatoes

 I have been getting a newsletter email from Tori Ritchie every week for quite a while now and get a new recipe with each one. There have been some very good ones. My friend Laura , who is a personal chef  told me about this and I signed right up.  Recently I got one for this chicken dish and I knew as soon as I saw this recipe, that I was going to make it. It is so very simple...not rocket science...but on a busy night when you need to get dinner on the table with a minimum of fuss, you throw this in the oven....make a salad and or a nice green veggie and you are in business.

Everyone loved this...the leftovers were wonderful...it was a good thing! The kid declared it a keeper...what more could I want.

  6. Thanks everyone...hope you give it a try, it is a really nice, homey, simple recipe. I used all organic thighs when I made it because that was what I had in the fridge...really good...

  8. How I love blue willow... the pattern is just spectacular. I got a 200 year old one on ebay... very small by today's standards but so lovely (and, I hate to say it, wildly under-priced!) It just feels like home and hearth. The food on the plate looks like a keeper. I just started using thighs and love them.. why did I neglect them all these years... cheaper and so flavorful!

    Deana...I have a few really old Blue Willow pieces...unmarked...I do not use them as much as I used to. Anything blue and white is what I adore!

    Thighs rock...after years of white meat only...even the kids now enjoy the thighs. It is funny because we did not eat much dark meat until we had kids, when I made a whole chicken they got the breast and my husband and I took the legs and thighs...we started to love them!

    I just bought a bunch of Murray's thighs to make the vinegar chicken tomorrow...the kid's request!

  15. I've never roasted chicken at 450F but I'll definitely give this recipe a try. It looks crispy and delicious!

  16. Dragana I always roast my chicken at 450*...depending on the recipe...sometimes I turn it down after 20 minutes to 400* to finish if I am making a whole bird...you get great results that way roasting at a higher temperature.
