One of our favorite things to do with the left over corned beef and potatoes from the St Patrick's Day feast, is to make corned beef hash and eggs. No real recipe...just saute up some onions, leftover potatoes, red peppers if you have them, and some diced leftover corned beef. Saute it all until the potatoes are nice and crusty. Poach some eggs...serve them on top of the hash. Sprinkle a bit of parsley over top.
If you have a bit of Herbed Soda bread leftover...toast some up and serve it with butter....
a nice supper or brunch!

This hash looks just fabulous. I'm getting hungry just staring out your gorgeous pictures. I love how many meals you can get out of celebrating St. Patty's! Corned beef really goes a long way!

ReplyDeleteLinda, great looking breakfast. We had something very similar this morning. Unfortunately, I didn't have corned beef so made do with a bacon, mushroom and potato hash instead. I'm thinking I should try and find a corned beef to cook tomorrow.

ReplyDeleteGreat cooks thing alike!! After making my corned beef tomorrow for sandwichs I am making hash....We love hash...I make mine slightly different. I put the corned beef in the food proccesor then fold in the potatoes...I serve mine with sliced tomatoes instead of the poached egg....Yummy!!
